1 16 oz package elbow macaroni.
1/4 cup butter
1/4 cup flour
3 cups milk
8oz cream cheese cut into chunks
1tsp salt 1/2 tsp pepper
2 cups shredded extra sharp cheddar
2 cups shredded Gouda
1 cup shredded Parmesan


Cook pasta according to directions. In medium sauce pan melt butter, then stir in flour and cook over medium heat until thick and bubbly, stirring frequently to ensure it doesn't burn. Whisk in milk and bring to boil, cook until thickened then add cream cheese stir until mixture is smooth, add salt and pepper.

In a large bowl combine 1 cup extra sharp cheddar, 1 cup Gouda, all of Parmesan, pasta, and cream sauce. Spoon mixture into 11x9.5 aluminum roasting pan coated with non stick cooking spray. Sprinkle top with remaining extra sharp cheddar and Gouda.

Smoke 225 (do not cover pan) for 1 hour until top is brown and crispy.

This makes A LOT by the way. Fills an entire 11x9.5 pan.
